What operating system do you use for servers?

I run Ubuntu on my desktop server and on my vps.

I used to use debian and arch on my desktop.

I used to use CentOS, but nowadays I just use Debian on the server.

I use generally stick to centos because I use redhat at work so it makes life easy when I get home and don't really have to think about it.

I am using Proxmox as vitualization environment and bare bone Debian as base for server os. I am also experiementing with Apline linux as server OS.

I've always used Debian for servers in the past. Used to run a web server in a farm running Debian. But if I went to go spin up a server right now, I'd probably throw Arch on it if only because the software is up-to-date. Yes, stability is a main concern with any server, but any server I would run personally wouldn't necessarily be a production server. It would simply be for personal use.
